The easiest way if you have access to the server is to install the ASP.NET MVC 3 Tools Update.
Which can be found here (as time of publication).

After that you do an xcopy or publish if the service will let you; think this is only IIS7 though.
You can do an xcopy, I am going to do somestuff with installers at a later date as I don't like the current publish or deployment packages on offer.
